The turkey, like last year, is going to be brined. I rose at 3:30a, removed the bits stored in the turkey, and dunked him in a bucket of ice water and flavor agents. In about 3 hours, I’ll wake again to turn it over for full effect. By 10a or so, we’ll be ready to cook… but I suppose I’d better wait a little longer so I can time it better based on arrivals…
I’m ready to go back to sleep now.
